Cranberry muffins

They're bread, not cake, and they're one of the fine features of autumn, when cranberries show up in the supermarket produce section. These muffins not only are nourishing, but they also bring clarity.

2 eggs
3 T olive oil
3 T honey
3 T molasses
3 T orange juice concentrate
1 t vanilla
1 c mashed banana
1 c chopped cranberries
1/2 c chopped nuts (pref. pecans)
1 c sifted whole wheat flour
2 T wheat bran
2 T wheat germ
1/4 c oat bran
1 T grated orange rind
1/2 t baking powder
1/2 t baking soda

Combine dry ingredients in one bowl; wet ingredients in another; and then mix them together. Stir by hand, just until combined. Fold in cranberries & nuts. Spoon into greased muffin cups and bake at 375° for 20-25 minutes.

Exactly what I need to feed my Hannah, who is of the constipated type. I'll have to omit the nuts and puree the crans, but if I can get this fiber into her, I'll be set. Er, she will be.

I'll let you know how they work. I'm all about regularity. Colon health is where it's at.

Some call it "regularity," some call it "clarity." The former would be a calendrical perspective, I suppose, whereas the latter might suggest a shitty outlook on life. . . . .
